The Best Chocolate Cake in the World - By Chef Pachi Larrea
Pachi Larrea - Famous pastry chef from Quito specialized in chocolate and fine pastry, with studies in Ecuador, Argentina and Spain.
He has been developing his career in haute cuisine in Barcelona for more than 10 years. He worked with Chef Oriol Balaguer in Barcelona and was the Executive Pastry Chef of the 5 star hotel "One Hotel" in Miami.
Today Pachi has two stores "Pachi Larrea Pastissería" located in Castelldefels, Catalunya. In addition, Chef Larrea is an ambassador for República del Cacao, promoting fine aroma cocoa around the world.
After winning the award for the best Traditional Coca San Joan 2024, in Catalonia, Pachi participated along with 220 chefs from around the world in the Paco Torreblanca International Award of Haute Patisserie, within the framework of the VI Alicante Gastronomic Fair Alma Mediterranea. Becoming one of the 10 finalists who presented their creations to a jury composed of Jordi Roca, Oriol Balaguer, Albert Adriá, Jacob Torreblanca, Carlos Mampel, Iginio Massari and Fréderic Bau.
His creation, described as innovative, impeccably produced and intensely flavored, won first place in the competition and Chef Larrea is now the creator of the World's Best Chocolate Cake 2024.
Now, in Ecuador we have the incredible pride of having their "Amazonía" cake, winner of the award for the Best Chocolate Cake in the World, in all our chocolate-boutiques for a limited time in 2024.
Amazonía is composed of a Cocoa sponge cake, vanilla Namelaka with White Chocolate Ecuador 31%, Dark Chocolate Truffle Amazonía 75%, Milk Chocolate Ecuador 40% Caramelized and cocoa juice, Citrus compote, Dark Chocolate mousse Amazonía 75%, reconstituted Sablée and icing Amazonía 75%.
