This week we present Noé and Fernando Carmona, founders and creators of the restaurant Noe Sushi Bar.
Noé Carmona is one of the great icons of Japanese gastronomy and fusion, gourmet lover, artist and innovator, his experience in the kitchen goes back to the best restaurants in Quito, where he built the pillars of a gastronomy that today conquers the most demanding palates. He developed his expertise after working with some of the greatest experts in the Japanese branch.
His passion, creativity, curiosity and some mysticism are aspects that have placed him where he is today. Proud of his birthplace, the province of Loja, he set out to bring flavors of his city and share them with the rest of the world, always seeking to create and fuse elements through distinctive techniques to play with the senses. His purpose is always to obtain perfection, beauty, and art in each preparation.
Fernando Carmona, Chef and Head of Research and Development at Sushi Corp with years of experience in different gastronomic branches, joins this mission.
He also shares the same passion for oriental culture as Noé, so they are always looking to take all their creations to the next level, focusing on using high quality local products combined with Japanese ingredients that provide art and culture in every bite.

During the interview we were able to witness the preparation of one of the restaurant's most characteristic desserts, the "Noah Style Brownie".
This is prepared with 100% Ecuadorian products, including our 56% dark chocolate, caramelized nuts, crunchy suspiro sticks, fresh seasonal fruit, striped chocolate, mint and vanilla ice cream, all dipped in chocolate, without a doubt a delicious dessert.
