Dark Chocolate Mexico 66%, a journey of Tradition and Taste
At República del Cacao we create high-end chocolates using fine aroma cacao from Latin American countries such as Ecuador, Peru, Dominican Republic and now Mexico. República del Cacao Mexico's 66% new dark chocolate has a particular intense profile in several flavor notes that make it a unique ingredient for the creations of chocolatiers and confectioners around the world.
Cacao and chocolate have always represented the essence of Mexican culture, a gastronomic heritage internationally recognized for its unmistakable flavor. The first transformation of cacao took place in Mexico: a beverage made from the beans of the fruit. Thus, as a tribute to this millenary history, we have created this new origin full of tradition and Mexican flavor.
For the launch of this new product, we prepared an event like no other, which made our attendees feel part of the culture and traditions of Mexico. Bougainvillea, papel picado, and gastronomic creations based on the flavors of this land, were just some of the experiences they lived. The event was held at the culinary art school, Cuina, in Mexico City and was attended by several renowned Mexican chefs such as Luis Robledo, Mao Montiel, Sofía Cortina, Alan Rubio, Silvia Guédez, Natividad Toledo, Roberto Gutiérrez, Xano Saguer and Fernanda Prado.
This new Dark Chocolate Mexico 66% is born from Trinitario cacao, a 100% fine aroma cacao from the regions of Chiapas and Tabasco. It has an intense profile with various fruity, floral and spicy flavor notes. Its 66% percentage expresses notes of roasted cacao, fused with yellow fruits, sweet pepper and orange blossom. With excellent fluidity for versatile use in pastry and chocolate applications, it is a true tribute to the colorful Mexican country.
In addition, its strong spicy notes make it easy to combine with savory dishes without losing its prominence, for example, it goes perfectly with ingredients such as pasilla, ancho or chipotle peppers for sweet and sour sauces or moles. It is also recommended for use in restaurant, ice cream and chocolate applications.
Through the development of this new chocolate, we have initiated the implementation of positive impact projects with the farmers who cultivate this unique variety of cacao. All these projects are based on our Sustainability Pillars, through which we ensure the social, environmental and economic development of all the actors in our value chain.
