Chef Marcello Guevara, from Ecuador to the World, Between Flavors and Accomplished Achievements
Chef Marcelo Guevara is one of our allied chefs in the United States. Originally from the Ecuadorian Amazon, he has featured the flavors of his homeland throughout his career and in all his creations. His story has filled us with inspiration and pride in being his chocolate of choice, an Ecuadorian origin chocolate for Ecuadorian hands that delight thousands with their flavors. Furthermore, he got to know our story up close when he visited us on a client trip in 2022 and experienced the entire traceability and authenticity of República del Cacao. Today, we introduce you to Chef Marcelo Guevara.

Who is Chef Marcelo? How would you describe yourself personally and professionally?
I am the Executive Pastry Chef for Legends Hospitality LLC, at AT&T Stadium, home of the Dallas Cowboys. I consider myself a unique and humble person simultaneously, and these qualities have helped me get to where I am. My passion is pastry; I enjoy exploring textures, flavors, and colors. I come from a tropical region in the Ecuadorian Amazon, where I grew up surrounded by coffee and passion fruit. This has left an indelible mark on me and constantly inspires my work.
What are the flavors that marked your life?
Coffee and passion fruit have been fundamental flavors in my life. I grew up enjoying them in my country, where everything was harvested and made by hand. Those intense and authentic flavors have always been with me.
When did you leave Ecuador for the USA, how did you get involved in pastry, and what was your journey to becoming the Executive Pastry Chef at Legends Hospitality LLC, AT&T Stadium, home of the Dallas Cowboys in Texas?
In 1994, when I arrived in the United States, I had the opportunity to work in pizzerias and pasta restaurants. However, I realized that my true passion was in pastry making. I met people involved in this field and took on the challenge of excelling in this art. I went through diverse professional experiences, including working with renowned chefs and high-level restaurants in New York. This entire journey helped me develop my style and create my own knowledge base. Adapting to the American market was a challenge, as it is a diverse country and each region has its unique preferences and tastes.
What is a day in the life of Chef Marcelo like?
Nowadays, I work in a stadium with a capacity of 115,000 people. Preparing pastries for sporting events and other special occasions is a task that requires a lot of planning and organization. I have a team of 25 to 35 people who work with me daily to ensure we provide the best possible pastry experience for our customers.
What experience has had the most impact on your career?
My passion for learning has always driven me to want more. The opportunity to work in a place as important as this stadium has been a truly significant experience.
How has it been to know the entire process of República del Cacao, from the origin to the chocolate you use in your creations?
Learning about República del Cacao's history and how they produce their chocolate has been fascinating. I've had the opportunity to see how they care about quality, the environment, and the communities that produce the ingredients. All of this has strengthened my connection with Ecuador and filled me with pride to be able to use an Ecuadorian product in my creations.
What do you find most fulfilling about your profession?
From my beginnings, chocolate has been my passion, and now, using the chocolate from my country in my recipes makes me extremely happy. Furthermore, knowing that the entire process is carried out sustainably and responsibly is very satisfying.
What would you tell aspiring pastry enthusiasts?
I would advise you to work hard and be constant in your efforts. Pastry is not easy, but with dedication and perseverance, great achievements can be reached.
I define my patisserie creations and their characteristics by focusing on a harmonious blend of high-quality ingredients, innovative techniques, and a keen aesthetic sensibility. My goal is to offer desserts that are not only visually stunning but also a delight to the palate, providing a memorable sensory experience. Whether it's fine chocolate, real butter, fresh fruits, or carefully selected spices, the quality of each component is paramount to the final taste and texture. * **Balance of Flavors and Textures:** I aim for a sophisticated balance. This means combining sweet with a hint of acidity, richness with lightness, and smooth textures with delightful crunch. Each element is designed to complement and enhance the others. * **Artistic Presentation:** The visual appeal is a crucial part of the experience. I strive for elegance and artistry in my designs, using vibrant colors, interesting shapes, and meticulous garnishes to create edible works of art. * **Innovation and Tradition:** While I respect classic pastry techniques and beloved flavor combinations, I also enjoy experimenting and introducing novel elements – perhaps an unexpected ingredient pairing, a modern plating style, or a unique textural contrast. * **Attention to Detail:** From the precise weighing of ingredients to the final flourish of decoration, every step is executed with meticulous care and attention to detail. This commitment ensures consistency and a superior finished product. * **Sensory Experience:** Ultimately, my creations are designed to evoke a positive sensory experience. This encompasses taste, smell, sight, and texture, all working together to create a moment of pleasure and indulgence for the consumer.
My creations are characterized by simplicity and innovation. I always strive to stand out with colors and flavor combinations, offering desserts from the southern United States adapted to my audience's tastes.
What inspires you to create?
My inspiration comes from my childhood and the simplicity of things. I like to work with few ingredients, but they must stand out for their quality and harmony of flavors.
What ingredients are always in your kitchen?
I always count on chocolate, organic ingredients, eggs, and a moderate amount of sugar. I care about using local ingredients, and here at the stadium, we have access to a wide variety of fresh, quality ingredients.
What do you think will be your audience's recipe trends?
My audience looks for accessible and easy-to-enjoy desserts. I always try to offer creations tailored to their preferences, using local ingredients and highlighting authentic flavors.
What does Republic of Cacao represent to you?
For me, República del Cacao represents Ecuadorian pride. I'm happy to be able to use and show the world a product from my country, and also appreciate the effort they make to maintain quality and sustainability in their production process. It's a privilege to work with their chocolate and share it with my audience.
