Crafted under the Andean sun, we present our new Ecuador 33% White Chocolate with Toasted Corn

July 1, 2021

The world of dessert cuisine is constantly evolving. That’s why our chocolates are crafted with the highest quality, professionalism, and excellence, developing innovative recipes that complement the creativity and dynamism of our chefs around the world. Today, we’re pleased to introduce our new Ecuadorian White Chocolate with Toasted Corn 33%.

This chocolate features two characteristic ingredients from Ecuadorian lands: panela and toasted corn. Our panela is produced by “Productos San José” in the community of Pacto, Ecuador, located in the Chocó Andino bioregion.

The entire process it undergoes is developed hand-in-hand with local sugarcane farmers. Their artisanal production practices allow this noble raw material to retain its nutrients, minerals, vitamins, and proteins. The corn comes from our suppliers, “La Campería,” located in the Ecuadorian Andes, at the foot of the Los Ilinizas Ecological Reserve. This ancient grain is an iconic Latin American product, which is why we seek to recover the gastronomic value of the Andean seed by incorporating it into this new product. We focus on using local and nearby ingredients, which is why La Campería's plant is only 30 km from our production plant.

The combination of these unique local ingredients with the singularity of our white chocolate makes this new chocolate a treat, with a caramelized color that gives the impression of having been forged like gold, under the very sun of the Andes.

The flavor notes we can find in this chocolate are: toasted corn, dulce de leche, toffee, cereal, caramel, and a hint of salt. A unique flavor combination that makes the White Chocolate with Toasted Corn one of the most special in our portfolio. Additionally, it is ideal for uses such as: mousses, cakes, ganaches, creams, molded items, machine enrobing, ice creams and sorbets, and sauces and beverages.

Thanks to our Ecuadorian White Chocolate with Toasted Corn 33%, we are able to implement various Knowledge Exchange projects, Environmental Commitment, Economic Sustainability, and Gender Equity in our partner communities of dairy farmers and sugarcane growers, which supports our B Corp certification.
