CHEF BRANDY PEREZ: A PASTRY CHEF MASTERMIND REVEALED
Chef Brandy Perez, a spectacular Pastry Chef at the Renaissance Schaumburg Hotel and Convention Center. A sharp patisserie in her work, defined by a magnificent way of creating well combined and recognizable multi flavor desserts that surprises our palates with a playful ground of flavors in a each byte. Besides her clever touch and dynamism in her preparations, texture is a big lead on her creations.
Being such a curious and enthusiastic detective of flavors, textures, shapes and colors has given Chef Brandy a way of getting inspiration for her creations. “I like to go out and explore the taste of new desserts that other chefs are creating and I ask myself how did they created this? What technique did they use? How can I improve upon that flavor combination? I like to pick an ingredient to highlight and then build the dessert around it.”
Besides her constant discovery of new creations, Chef Brandy also enjoys making traditional desserts. Her method to accomplish these flavors is through the search of Latin American ingredients that provide unique essence.
“APHRODISIAC MENU” A CULINARY EXCELLENCE AT RENAISSANCE HOTEL
Whipped vanilla bean mascarpone tart, raspberry chambord jam, coconut cream, chocolate cake crumbs, white chocolate, hibiscus and frozen yogurt. Sounds delightful right? This delightful dessert was created as part of the Aphrodisiac menu for the Renaissance Hotel by Chef Brandy. She combined the acidity of our Peru 62% paired with the fruitiness of raspberries. For the chocolate cake crumbs, she used the deep chocolate flavor of the cocoa powder. The creaminess of the 31% Ecuador white chocolate matched perfectly with vanilla bean and the floral notes of Hibiscus: “From Traveling to Ecuador I learned that one of the country’s main exports was flowers so I wanted to pay homage to the country by including the Hibiscus flower in the ice cream.”
Chef Brandy, as every excellent artist, gets the motivation for her creations based on her life experience given by the exposure of new feelings, places, discoveries, absorbs inspirational sensations.
