CHOCOHOLIC OF THE MONTH: Gonzalo Jimenez

“The reason I was drawn to Republica del Cacao, aside from the delicious chocolate, obviously, was the story.  In fact, it was the authenticity behind the story that made me want to partner with the brand. After visiting Ecuador it quickly became clear that every single person, from the farmers to the factory workers, and the CEO, are all dedicated in producing the highest quality of chocolates.

The level of care that is put into every ingredient from the cacao, to the milk, and the sugar -all using traditional harvesting techniques- comes through when you taste Republica del Cacao chocolates. That type of authenticity can only come from people with passion and pride in their work. Coming from humble beginnings myself,  it quickly became clear that if I wanted to be a chef, it was going to be a lot of work, but that work was fueled by my desire to be the best. When my partner Dave and I began our chocolate shop, Miette et Chocolate, we had miniscule capital, but we poured our heart and soul into creating something that would allow us to be proud to serve our customers. It is a joy to be able to work with a company that shares our enthusiasm for producing high quality, artisanal products and values tradition and culture as much as I do.”
